4 medium zucchinis, chopped

1 large onion, diced

3 cloves garlic, minced

2 tablespoons olive oil

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a dairy-free option)

1 teaspoon dried thyme

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

Fresh basil leaves for garnish

Zest of 1 lemon (optional, for brightness)

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 5-7 minutes until it becomes translucent. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Cook the Zucchini: Add the chopped zucchinis to the pot. Cook for about 5 minutes, stirring occasionally, until they start to soften.

      Add Liquid and Seasoning: Pour in the vegetable broth, and add the dried thyme, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to a simmer. Let it simmer for approximately 15-20 minutes, or until the zucchini is completely tender.

        Blend the Soup: Remove the pot from heat. Using an immersion blender, blend the soup until it's smooth and creamy. If you don’t have an immersion blender, you can carefully transfer the soup in batches to a countertop blender.

          Stir in the Cream: Return the blended soup to the pot (if using a countertop blender) and stir in the heavy cream (or coconut cream). Heat on low for another 5 minutes, allowing the flavors to meld. Adjust seasoning with more salt and pepper if necessary.
