Creamy Zucchini Corn Chowder

2 medium zucchinis, diced

1 cup corn kernels (fresh, frozen, or canned)

1 medium onion, diced

2 cloves garlic, minced

3 medium potatoes, peeled and diced

4 cups vegetable broth

1 cup heavy cream (or coconut milk for a dairy-free option)

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley or chives, for garnish

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sauté until softened and fragrant, about 3-4 minutes.

    Add Zucchini and Potatoes: Stir in the diced zucchini and potatoes. Cook for an additional 5 minutes, stirring occasionally.

      Pour in the Broth: Add the vegetable broth to the pot. Bring the mixture to a boil, then reduce heat and let it simmer for 15-20 minutes, or until the potatoes are tender.

        Incorporate Corn and Season: Stir in the corn, dried thyme, smoked paprika, salt, and pepper. Let the chowder simmer for another 5 minutes to allow the flavors to meld.

          Blend for Creaminess: Using an immersion blender, puree about half of the chowder directly in the pot until smooth and creamy. (Alternatively, you can transfer half the chowder to a blender, blend, and then return it to the pot.)

            Add Cream: Stir in the heavy cream (or coconut milk) and heat through for another 2-3 minutes. Adjust seasoning if necessary.
