8 oz elbow macaroni (gluten-free if desired)

1 cup raw cashews (soaked in water for at least 4 hours)

1 cup unsweetened almond milk (or any plant-based milk)

1/4 cup nutritional yeast

2 tbsp lemon juice

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

1 tbsp olive oil (optional for extra richness)

Fresh parsley or chives for garnish (optional)

Instructions
 

Cook the Pasta: Begin by cooking the elbow macaroni according to the package instructions. Drain and set aside.

    Prepare the Cheese Sauce: In a high-speed blender, combine the soaked cashews, almond milk, nutritional yeast, lemon juice, garlic powder, onion powder, smoked paprika, salt, and pepper. Blend until smooth and creamy. If the mixture is too thick, add more almond milk a little at a time until you reach your desired consistency.

      Heat the Sauce: Pour the cheese sauce into a saucepan over medium heat. Stir continuously for about 3-5 minutes until heated through and slightly thickened. If you'd like an extra touch of richness, stir in the olive oil at this stage.

        Combine Pasta and Sauce: Add the cooked macaroni to the saucepan, stirring until all the pasta is well coated with the creamy cheese sauce.
