Creamy Tomato Spinach Pasta

8 oz (225g) pasta of choice (penne or fettuccine work well)

2 tbsp olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, crushed

1 cup heavy cream

2 cups fresh spinach, chopped

1 tsp dried oregano

1/2 tsp red pepper flakes (adjust to taste)

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

    Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, making sure it doesn’t burn.

      Add Tomatoes: Pour in the crushed tomatoes along with their juices. Stir in the dried oregano and red pepper flakes. Let it simmer for about 5 minutes to meld the flavors.

        Make it Creamy: Lower the heat and stir in the heavy cream. Allow it to simmer for an additional 3-4 minutes, stirring occasionally until the sauce is well combined and slightly thickened.

          Incorporate Spinach: Add the chopped spinach into the sauce. Stir until the spinach wilts down, which should take about 2-3 minutes.

            Mix Pasta and Sauce: Add the drained pasta to the skillet. Toss to combine, and if the sauce seems too thick, gradually add some of the reserved pasta water until you reach your desired consistency.

              Add Cheese: Stir in the grated Parmesan cheese, and mix until melted and creamy. Season with salt and pepper to taste.

                Serve: Plate the creamy tomato spinach pasta, garnishing with fresh basil leaves and an extra sprinkle of Parmesan cheese if desired. Enjoy your meal!
