12 oz (340g) pasta of choice (fettuccine or penne recommended)

2 tablespoons olive oil

4 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juices

1 cup heavy cream

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1 cup fresh basil leaves, chopped

½ cup grated Parmesan cheese, plus more for serving

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and reserve about ½ cup of the pasta water.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant, careful not to burn it.

      Add Tomatoes: Pour in the diced tomatoes with their juices. Stir in the dried basil and red pepper flakes (if using). Cook for about 5-7 minutes, allowing the mixture to simmer and thicken slightly.
