Creamy Spinach Artichoke Pasta

8 oz (225g) pasta of your choice (fettuccine, penne, or rotini)

1 cup fresh spinach, chopped

1 can (14 oz) artichoke hearts, drained and quartered

2 cloves garlic, minced

1 cup heavy cream

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

2 tbsp olive oil

1 tsp lemon juice

Salt and pepper to taste

Crushed red pepper flakes (optional, for a kick)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1 cup of the pasta cooking water.

    Sauté Garlic and Spinach: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped spinach and cook until wilted, about 2-3 minutes.

      Prepare the Cream Sauce: Pour in the heavy cream and stir to combine. Bring the mixture to a gentle simmer, then reduce the heat to low. Add the mozzarella and Parmesan cheese, stirring continuously until the cheeses are melted and the sauce is creamy.

        Add Artichokes and Season: Carefully fold in the drained artichoke hearts, lemon juice, salt, pepper, and crushed red pepper flakes (if using). Allow this to cook for another 2-3 minutes to meld the flavors. If the sauce is too thick, you can gradually add some reserved pasta water until desired consistency is achieved.
