8 oz (225 g) penne pasta

1 lb (450 g) Italian sausage (mild or spicy, your choice)

1 tbsp olive oil

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 zucchini, sliced

1 cup (240 ml) heavy cream

1 cup (240 ml) chicken broth

1 cup (100 g) grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Brown the Sausage: In a large skillet over medium heat, add the Italian sausage. Use a wooden spoon to break it apart into small pieces as it cooks. Brown for about 5-7 minutes until fully cooked. Remove the sausage and place it on a plate, leaving any rendered fat in the skillet.

      Sauté the Vegetables: In the same skillet, add olive oil if needed, then add the diced onion. Sauté for about 2-3 minutes until softened. Next, add the minced garlic, sliced bell peppers, and zucchini. Cook for an additional 5-6 minutes, or until the vegetables are tender.

        Create the Sauce: Pour in the chicken broth and bring it to a simmer. Stir in the heavy cream, Italian seasoning, and the cooked sausage. Let it simmer for 2-3 minutes until slightly thickened.
