1 pound Italian sausage (mild or spicy, your choice)

4 cups small Yukon Gold potatoes, diced

1 medium onion, chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup shredded cheddar cheese

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

2 tablespoons olive oil

1/2 cup fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Sausage: In a large skillet over medium heat, add the Italian sausage. Using a wooden spoon, break it apart and cook until browned and fully cooked, about 5-7 minutes. Remove with a slotted spoon and set aside, leaving the drippings in the pan.

      Sauté Vegetables: In the same skillet, add the olive oil if needed, then toss in the chopped onion. Sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.

        Combine the Ingredients: In a large mixing bowl, combine the cooked sausage, sautéed onion and garlic, diced potatoes, heavy cream, chicken broth, thyme, paprika, salt, and pepper. Mix well until all ingredients are evenly coated.
