12 oz penne pasta

3 large red bell peppers

1 medium onion, chopped

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh basil, for garnish

Optional: red pepper flakes for heat

Roast the Peppers: Preheat your oven to 400°F (200°C). Place the red bell peppers on a baking sheet and roast them in the oven for 25-30 minutes or until the skin is blistered and charred. Remove from the oven and place them in a bowl, covering with plastic wrap for about 10 minutes to steam. This will make peeling easier.

    Cook the Pasta: While the peppers are roasting, bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

      Prepare the Sauce: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and smoked paprika, cooking for an additional 1-2 minutes until fragrant.

        Blend the Peppers: Once the roasted peppers are cool enough to handle, peel off the charred skin and remove the seeds. Add the peppers to a blender along with the sautéed onion and garlic mixture. Blend until smooth.
