2 tablespoons olive oil

12 ounces fettuccine pasta

2 cups heavy cream

1 cup grated Parmesan cheese

4 tablespoons unsalted butter

Fresh parsley, finely chopped (for garnish)

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves, drizzle with 1 tablespoon of olive oil, and wrap it in aluminum foil. Roast in the oven for about 30-35 minutes, until the cloves are golden and soft. Let it cool slightly, then squeeze the roasted garlic out of the skins and set aside.

    Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and reserve about 1 cup of the pasta water.
