12 oz spaghetti or your choice of pasta

1 cup fresh ricotta cheese

Zest and juice of 1 large lemon

2 tablespoons olive oil

3 cloves garlic, minced

1/2 cup grated Parmesan cheese

1/4 cup fresh basil leaves, chopped

Salt and pepper, to taste

Red pepper flakes (optional, for heat)

Extra lemon zest and basil for garnish

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the rest and set aside.

    Prepare the Sauce Base: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.

      Combine Ricotta and Lemon: In the skillet, reduce heat to low. Stir in the ricotta cheese, lemon zest, and lemon juice. Mix until smooth and creamy, then season with salt, pepper, and red pepper flakes if using.

        Mix the Pasta and Sauce: Add the drained pasta to the skillet with the ricotta mixture. Toss gently to combine, adding reserved pasta water, a little at a time, until reaching your desired creaminess.

          Finish with Cheese and Basil: Stir in the grated Parmesan cheese and chopped basil. Adjust seasoning with more salt and pepper to taste.
