Creamy Pesto Pasta with Cherry Tomatoes

12 oz pasta of your choice (fettuccine or penne works great)

1 cup fresh basil leaves

1/3 cup pine nuts (or walnuts)

1/2 cup Parmesan cheese, grated

2 cloves garlic, minced

1/2 cup olive oil

1/2 cup heavy cream

1 cup cherry tomatoes, halved

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Make the Pesto: In a food processor, combine the fresh basil, pine nuts, Parmesan cheese, and minced garlic. Pulse until finely chopped. Slowly drizzle in the olive oil while the processor is running until the mixture is smooth. Season with salt and pepper to taste. Set aside.

      Prepare the Creamy Sauce: In a large skillet over medium heat, add the heavy cream and half of the pesto mixture. Stir until well combined and heated through, about 2-3 minutes.

        Combine Everything: Add the cooked pasta to the skillet with the creamy pesto sauce, tossing to coat. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.

          Add Cherry Tomatoes: Gently fold in the halved cherry tomatoes and cook for an additional minute until they are just warmed.

            Serve: Plate the creamy pesto pasta, garnishing with fresh basil leaves and additional grated Parmesan if desired. Enjoy your delicious meal!
