8 oz (about 2 cups) tri-color rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup black olives, pitted and sliced

1 cup cooked chicken breast, shredded (optional)

1/2 cup fresh parsley, chopped

1/2 cup creamy dressing (see below for the recipe)

1/4 cup mayonnaise

1/4 cup Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

Cook the Pasta: In a large pot, bring salted water to a boil. Add the tri-color rotini and cook according to package instructions until al dente. Drain and rinse under cold water to cool the pasta down. Set aside.

    Prepare the Vegetables: While the pasta is cooking, chop the cherry tomatoes, cucumber, red bell pepper, and red onion. If you're using chicken, shred it into bite-sized pieces.

      Make the Dressing: In a separate bowl, combine the creamy dressing ingredients — mayonnaise, Greek yogurt, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Whisk together until smooth and well combined.

        Combine Ingredients: In a large mixing bowl, combine the cooked and cooled pasta, chopped vegetables, black olives, shredded chicken (if using), and fresh parsley.
