Creamy Orzo with Lemon & Spinach

1 cup orzo pasta

2 tablespoons olive oil

2 cloves garlic, minced

1 small onion, finely chopped

4 cups fresh spinach (or 1 cup frozen spinach, thawed and drained)

1 cup vegetable broth

1 cup heavy cream (or coconut cream for a dairy-free version)

Juice and zest of 1 lemon

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes for a spicy kick

Instructions
 

Cook the Orzo: In a large pot of salted boiling water, cook the orzo according to package instructions until al dente. Drain and set aside, reserving a little pasta water (about 1/4 cup) in case you need it later.

    Sauté Aromatics: In a large skillet over medium heat, add olive oil. Once hot, add the minced garlic and chopped onion. Sauté for about 3-4 minutes until the onion is translucent and fragrant.

      Add Spinach: Stir in the fresh spinach, cooking until wilted (about 2-3 minutes). If using frozen spinach, ensure it’s heated through.

        Make It Creamy: Pour in the vegetable broth, followed by the heavy cream. Bring the mixture to a simmer, stirring occasionally. Let it simmer for 3-4 minutes until slightly thickened.

          Incorporate Orzo: Add the cooked orzo to the skillet along with the lemon juice, lemon zest, and grated Parmesan. Stir everything together until fully combined. If the mixture is too thick, add a little reserved pasta water to achieve your desired consistency. Season with salt and pepper to taste.
