4 boneless, skinless chicken breasts

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach, roughly chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional, for heat)

Fresh basil leaves, for garnish (optional)

Instructions
 

Season the Chicken: Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper.

    Sear the Chicken: In a large skillet over medium heat, add olive oil. Once hot, place the chicken breasts in the pan and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Garlic and Vegetables: In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant. Then add the cherry tomatoes and cook for about 3-4 minutes until they start to soften.

        Add Spinach and Cream: Stir in the baby spinach, allowing it to wilt slightly. Pour in the heavy cream and mix well.

          Incorporate Cheese and Seasoning: Reduce the heat to low and stir in the grated Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Mix until the cheese has melted and the sauce is creamy.

            Combine with Chicken: Return the seared chicken breasts to the pan, spooning the sauce over them. Let it simmer for an additional 2-3 minutes to heat through and meld the flavors.
