2 cups elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup breadcrumbs (preferably panko)

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook until al dente, according to package instructions. Drain and set aside.

    Make the Cheese Sauce: In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1 minute to make a roux, stirring constantly.

      Add Milk: Gradually whisk in the milk, ensuring there are no lumps. Continue to cook and stir until the mixture thickens and begins to bubble.

        Incorporate the Cheese: Remove the saucepan from the heat, then stir in the shredded cheddar, mozzarella, and Parmesan cheese. Mix until the cheeses are fully melted and the sauce is silky smooth.

          Flavor It Up: Stir in the garlic powder, onion powder, smoked paprika, and season with salt and pepper to taste.

            Combine Pasta and Sauce: Add the drained macaroni into the cheese sauce, stirring until all the pasta is well coated.

              Prepare for Baking: Preheat your oven to 350°F (175°C). Lightly grease a muffin tin with cooking spray or olive oil to prevent sticking.

                Assemble the Cups: Spoon the mac and cheese mixture into each muffin cup, filling them almost to the top.

                  Make the Topping: In a small bowl, toss the breadcrumbs with olive oil. Sprinkle the breadcrumb mixture evenly on top of each mac and cheese cup.

                    Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, until the tops are golden and crispy.

                      Cool and Garnish: Once baked, let the cups cool for a few minutes. Carefully run a knife around the edges and gently lift them out of the muffin tin. Garnish with freshly chopped parsley before serving.
