Creamy Lemon Garlic Rice Bowl

1 cup jasmine or basmati rice

2 cups vegetable broth (or water)

1 tablespoon olive oil

4 cloves garlic, minced

1 medium onion, chopped

1 cup baby spinach

1 cup cherry tomatoes, halved

1 lemon (zested and juiced)

½ cup heavy cream or coconut cream

¼ cup grated Parmesan cheese (optional)

Salt and pepper to taste

Fresh parsley or basil, for garnish

Instructions
 

Cook the Rice: Rinse the jasmine or basmati rice under cold water until the water runs clear. In a medium saucepan, combine the rice and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and let it simmer for 15-20 minutes, or until the rice is tender and liquid is absorbed. Once done, fluff with a fork and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes, or until it becomes translucent. Then, stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

      Add Vegetables: Add the baby spinach and cherry tomatoes to the skillet. Cook for about 2-3 minutes until the spinach wilts and the tomatoes soften.

        Make the Creamy Sauce: Lower the heat and pour in the heavy cream (or coconut cream) to the skillet. Stir in the lemon zest and juice. If using Parmesan cheese, add that now as well. Season the mixture with salt and pepper to taste. Allow it to simmer for about 5 minutes, stirring occasionally until the sauce thickens slightly.

          Combine Rice and Sauce: Gently fold the cooked rice into the creamy lemon garlic sauce mixture until well combined. Continue to cook on low heat for another 2-3 minutes to let the flavors meld together.
