4 cups fresh corn kernels (or frozen, thawed)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

2 fresh jalapeños, deseeded and finely chopped (adjust for spice preference)

1 cup heavy cream

1 cup cream cheese, softened

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and black pepper, to taste

1/2 cup freshly grated Parmesan cheese

1/4 cup chopped fresh cilantro or parsley (for garnish)

Lime wedges, for serving

Heat the oil: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté until translucent, about 3-4 minutes.

    Add garlic and jalapeños: Stir in the minced garlic and chopped jalapeños. Sauté for an additional 2-3 minutes until fragrant and slightly softened.
