12 oz (340g) penne pasta

1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 zucchini, diced

1 cup spinach, fresh or frozen (thawed and drained)

1 cup cherry tomatoes, halved

1 cup feta cheese, crumbled

1 cup Greek yogurt

1 cup heavy cream

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

1 cup shredded mozzarella cheese

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.

      Sauté Vegetables: In a large skillet over medium heat, add olive oil. Once heated, add chopped onion and garlic, sautéing for about 2-3 minutes until fragrant. Add the diced red bell pepper and zucchini, cooking for an additional 5 minutes until softened.

        Combine Ingredients: Stir in the spinach and cherry tomatoes, cooking until the spinach has wilted and the tomatoes are just slightly softened. Season the mixture with dried oregano, thyme, salt, and pepper.

          Make the Creamy Sauce: In a bowl, combine the crumbled feta cheese, Greek yogurt, and heavy cream. Mix until smooth and creamy. Adjust seasoning with salt and pepper if needed.

            Mix Everything Together: In a large mixing bowl, combine the cooked pasta and vegetable mixture. Pour the creamy sauce over the pasta and mix well until everything is evenly coated.

              Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch (or similar) baking dish. Sprinkle the shredded mozzarella cheese evenly on top.
