Preheating your oven is crucial for achieving the perfect roast on your cauliflower. Set your oven to 425°F (220°C) to ensure that it reaches the desired temperature before you place your dish inside. The high heat will help caramelize the natural sugars in the cauliflower, enhancing its flavor and giving it a delicious golden brown exterior. This step is essential in ensuring even cooking throughout the dish.

Ingredients

1 large head of cauliflower, cut into florets

4 tablespoons olive oil

6 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Cauliflower: In a large mixing bowl, toss the cauliflower florets with 2 tablespoons of olive oil, salt, and pepper until evenly coated. Spread the florets in a single layer on a baking sheet.

Roast the Cauliflower: Roast the cauliflower in the preheated oven for 25-30 minutes, or until golden and tender, tossing halfway through to ensure even baking.

Make the Garlic Cream Sauce: In a medium skillet over medium heat, add the remaining 2 tablespoons of olive oil and the minced garlic. Sauté for about 2 minutes until fragrant; be careful not to burn the garlic.

Add Cream and Cheese: Reduce the heat to low, then pour in the heavy cream, stirring well. Gradually add the Parmesan cheese, stirring until melted and smooth. Season with thyme, smoked paprika, salt, and pepper to taste.

Combine Cauliflower and Sauce: In a large baking dish, combine the roasted cauliflower florets and the creamy garlic sauce. Mix well to ensure all the florets are coated.

Top with Mozzarella: Sprinkle the shredded mozzarella cheese evenly on top of the cauliflower bake.

Bake Again: Return to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbling, and the top is slightly golden.

Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving. Enjoy your delicious and creamy garlic roasted cauliflower bake!
