Creamy Garlic Pasta with Chicken

8 oz (225g) fettuccine or your choice of pasta

2 boneless, skinless chicken breasts

4 tablespoons olive oil, divided

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup spinach leaves (fresh)

1 tablespoon fresh parsley, chopped (for garnish)

Red pepper flakes (optional, for a spicy kick)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: While the pasta cooks, season both sides of the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and let it rest before slicing it into strips.

      Make the Garlic Sauce: In the same skillet, lower the heat to medium and add the remaining 2 tablespoons of olive oil. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.

        Add the Liquids: Pour in the chicken broth and scrape any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes. Then, stir in the heavy cream and bring it to a gentle simmer.
