Ingredients

8 oz (225 g) fresh mushrooms (cremini or button), sliced

3 tablespoons butter

2 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon dried thyme (or 1 teaspoon fresh thyme)

1/4 teaspoon red pepper flakes (optional, for spice)

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

Salt and pepper to taste

4 slices of hearty bread (such as sourdough or whole grain)

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Mushrooms: In a large skillet, heat the butter and olive oil over medium heat. Add the sliced mushrooms and cook for about 5-7 minutes, stirring occasionally, until they are browned and tender.

Add Garlic and Season: Stir in the minced garlic, dried thyme, and red pepper flakes (if using). Sauté for another 1-2 minutes, until the garlic is fragrant. Be careful not to burn it.

Create the Creamy Sauce: Lower the heat, and pour in the heavy cream. Stir well to combine. Add the grated Parmesan cheese, stirring until melted and the mixture is creamy. Season with salt and pepper to taste. Let it simmer for about 2-3 minutes, allowing the sauce to thicken slightly.

Toast the Bread: While the mushroom mixture is simmering, toast the slices of bread until golden brown. You can use a toaster or place them under the broiler for a few minutes, keeping a close eye to avoid burning.

Assemble the Toasts: Once the bread is toasted and the mushroom sauce is ready, pile great spoonfuls of the creamy garlic mushrooms onto each slice of toast.

Garnish and Serve: Sprinkle fresh parsley over the top for a pop of color and flavor. Serve immediately while warm and creamy.
