8 oz (about 225g) pasta of choice (penne or fusilli works well)

1 can (15 oz) chickpeas, drained and rinsed

1 cup heavy cream or coconut cream for a dairy-free option

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 cup fresh spinach, chopped

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Fresh basil or parsley for garnish

Red pepper flakes (optional, for a spicy kick)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta cooking water before draining the rest. Set the pasta aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and sauté for an additional minute until fragrant.

      Add Chickpeas: Stir in the drained chickpeas, oregano, and smoked paprika. Cook for another 2-3 minutes, allowing the chickpeas to slightly crisp up and mingle with the onions and garlic.

        Create the Creamy Sauce: Lower the heat, then pour in the heavy cream or coconut cream. Stir to combine, allowing it to simmer for about 2 minutes. If the sauce is too thick, gradually add some reserved pasta cooking water until the desired consistency is achieved.

          Incorporate Spinach: Add the chopped spinach to the skillet and stir until wilted, about 2-3 minutes. Mix in the grated Parmesan cheese (or nutritional yeast) and season with salt, pepper, and red pepper flakes if desired.

            Combine Pasta and Sauce: Add the cooked pasta directly into the skillet with the creamy chickpea sauce. Gently toss everything together, allowing the pasta to absorb some of the sauce.
