1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

2 tablespoons lemon juice

1 tablespoon Dijon mustard

1 clove garlic, minced

1 teaspoon Worcestershire sauce (vegan if desired)

1/4 cup nutritional yeast

Salt and pepper to taste

4 large whole wheat or spinach tortillas

2 cups romaine lettuce, chopped

1/2 cup cherry tomatoes, halved

1/4 cup grated vegan parmesan cheese (optional)

Fresh black pepper and croutons for serving (optional)

Instructions
 

Prepare the Chickpea Mixture: In a large mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.

    Make the Creamy Dressing: In a separate bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, Worcestershire sauce, nutritional yeast, salt, and pepper until well combined.

      Combine Ingredients: Pour the dressing over the mashed chickpeas and mix until the chickpeas are well coated and the mixture has a creamy consistency. Adjust seasoning with more salt and pepper if needed.

        Assemble the Wraps: Lay out the tortillas on a clean surface. Distribute the chickpea mixture evenly among the tortillas, leaving a little space around the edges.
