1 lb (450g) boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 packet taco seasoning (approximately 1 oz)

1 cup chicken broth

1 cup heavy cream (or half-and-half for a lighter version)

1 cup shredded cheddar cheese

1/2 cup sour cream

Salt and pepper to taste

Fresh cilantro for garnish

Tortilla chips or soft tortillas for serving

Instructions
 

Sauté the Chicken: In a large skillet over medium-high heat, add the olive oil. Once hot, add the diced chicken. Season with salt and pepper, and sauté until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.

    Cook the Vegetables: In the same skillet, add the chopped onion and bell pepper. Sauté until the onions are translucent, about 3–4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Mix in the Beans and Corn: Add the black beans and corn to the skillet, stirring well to combine with the onions and peppers.

        Add Flavoring: Sprinkle the taco seasoning over the vegetable and bean mixture, stirring to coat evenly. Then, pour in the chicken broth, stirring well to incorporate everything.

          Create the Creamy Sauce: Reduce the heat to medium-low. Gradually stir in the heavy cream and bring the mixture to a gentle simmer. Allow it to cook for about 3-4 minutes until slightly thickened.

            Combine Chicken and Cheese: Return the cooked chicken to the skillet. Stir in the shredded cheddar cheese and sour cream, mixing until the cheese is melted and everything is warmly combined.
