Ingredients

1 large head of cauliflower, cut into florets

1 cup sharp cheddar cheese, grated

1/2 cup cream cheese, softened

1/4 cup sour cream

2 cloves garlic, minced

1/4 cup unsalted butter

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper (adjust to taste)

1/4 teaspoon smoked paprika (optional, for added flavor)

2 tablespoons chives, chopped (for garnish)

Instructions

Prepare the Cauliflower: In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 10-12 minutes or until tender.

Drain and Steam: Drain the cauliflower well and allow it to steam for a few minutes to remove excess moisture. This step is key to achieving a creamy texture.

Sauté Garlic: In a small skillet, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Blend Ingredients: In a large mixing bowl or using a food processor, add the steamed cauliflower, sautéed garlic with butter, cream cheese, and sour cream. Blend until smooth and creamy. If using a food processor, pulse until you reach your desired consistency.

Add Cheese: Once smooth, mix in the grated cheddar cheese, salt, black pepper, and smoked paprika (if using). Blend again until the cheese is melted and fully incorporated.

Taste and Adjust: Taste the mash and adjust seasoning as necessary. If you'd like a little more creaminess, you can add a splash of milk or more sour cream.

Serve: Transfer the creamy cheddar cauliflower mash to a serving bowl. Garnish with chopped chives and more black pepper if desired. Serve hot as a delicious side dish!
