Creamy Cauliflower Alfredo Pasta

1 medium head of cauliflower, cut into florets

2 cups vegetable broth

2 tablespoons olive oil

3 cloves garlic, minced

1 cup unsweetened almond milk (or any milk of choice)

1/4 cup nutritional yeast (for cheesiness)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

12 oz pasta of choice (fettuccine or penne recommended)

Fresh parsley, chopped (for garnish)

Toasted pine nuts or walnuts (optional, for garnish)

Instructions
 

Cook the Cauliflower: In a large pot, bring vegetable broth to a boil. Add the cauliflower florets and simmer for about 10-12 minutes until fork-tender. Drain and set aside.

    Sauté the Garlic: In a skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 2 minutes, until fragrant and slightly golden. Be careful not to burn the garlic.

      Blend the Sauce: In a blender, combine the cooked cauliflower, sautéed garlic, almond milk, nutritional yeast, garlic powder, onion powder, salt, and pepper. Blend until smooth and creamy. Adjust thickness by adding more milk if needed.

        Cook the Pasta: While the sauce is blending, cook the pasta according to package instructions until al dente. Save a cup of pasta water before draining.

          Combine: In a large saucepan, combine the drained pasta and the creamy cauliflower sauce over low heat. Mix well, adding reserved pasta water a little at a time until desired sauce consistency is reached. Taste and adjust seasoning with more salt and pepper if needed.

            Serve: Divide the creamy pasta into bowls. Garnish with chopped fresh parsley and toasted nuts if using. Serve hot and enjoy!
