Creamy Carrot Ginger Soup

1 tablespoon olive oil

1 medium onion, chopped

4 cloves garlic, minced

1 tablespoon freshly grated ginger

1 pound (about 4 cups) carrots, peeled and chopped

4 cups vegetable broth

1 cup coconut milk (or heavy cream)

1 teaspoon ground cumin

1/2 teaspoon ground turmeric

Salt and black pepper, to taste

Fresh cilantro or parsley, for garnish

Optional: a squeeze of lime juice for brightness

Heat the Oil: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until the onion becomes translucent.

    Add Aromatics: Stir in the minced garlic and freshly grated ginger. Cook for another minute, stirring frequently, until fragrant.

      Cook the Carrots: Add the chopped carrots to the pot. Toss them with the onion mixture, and cook for approximately 5 minutes.

        Add Spice & Liquid: Sprinkle in the ground cumin and turmeric. Stir to coat the carrots evenly. Then, pour in the vegetable broth and bring the mixture to a boil.

          Simmer: Reduce the heat to low and let the soup simmer for about 20 minutes, or until the carrots are tender.

            Blend: Using an immersion blender, puree the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a regular blender. If using a regular blender, be sure to let it cool slightly and blend in batches to avoid splatters.

              Add Creaminess: Once the soup is blended to a smooth consistency, return it to the pot (if using a regular blender). Stir in the coconut milk (or heavy cream) and warm through. Season with salt and black pepper to taste.

                Finish & Serve: If desired, add a squeeze of lime juice for a zesty touch. Ladle the soup into bowls and garnish with fresh cilantro or parsley.
