Ingredients

12 oz penne pasta

1 lb shrimp, peeled and deveined

1 tablespoon Cajun seasoning

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped

Salt and pepper to taste

Red pepper flakes (optional, for extra heat)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Season the Shrimp: In a bowl, toss the shrimp with the Cajun seasoning, ensuring they are evenly coated.

Sauté Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the seasoned shrimp and cook for about 2-3 minutes on each side, or until they are pink and opaque. Remove shrimp from skillet and set aside.

Sauté Vegetables: In the same skillet, add the chopped onion and diced bell pepper. Sauté for about 5 minutes, or until the vegetables are tender. Add garlic and cook for an additional minute, stirring constantly.

Make the Sauce: Pour in the chicken broth, stirring to deglaze the skillet and combine all the flavors. Allow it to simmer for about 3 minutes. Reduce the heat to low and slowly stir in the heavy cream, mixing until the sauce is creamy.

Combine Everything: Add the grated Parmesan cheese to the sauce, stirring until melted and well incorporated. If the sauce is too thick, you can add a splash more of chicken broth to reach your desired consistency.

Mix Pasta and Shrimp: Add the cooked penne pasta and sautéed shrimp to the skillet. Toss everything together in the creamy sauce until well coated. Season with salt, pepper, and red pepper flakes (if using) to taste.

Garnish and Serve: Remove from heat, garnish with freshly chopped parsley, and serve immediately. Enjoy your delicious Creamy Cajun Shrimp Penne!
