1 cup long-grain white rice

2 cups vegetable broth (or chicken broth)

2 cups fresh broccoli florets (about 1 medium head)

1 cup sharp cheddar cheese, shredded

1/2 cup cream cheese, softened

1/2 cup sour cream

1/4 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Dijon mustard

Salt and pepper to taste

1/2 cup breadcrumbs (for topping)

2 tablespoons olive oil or melted butter

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Rice: In a medium saucepan, bring 2 cups of vegetable or chicken broth to a boil. Add the rice, stir briefly, then reduce heat to low, cover, and simmer for about 15-18 minutes until the rice is cooked and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

      Prepare the Broccoli: While the rice is cooking, steam the broccoli florets in a microwave-safe bowl with a splash of water for about 3-4 minutes until tender but still bright green. Drain and set aside.

        Make the Cheese Mixture: In a large mixing bowl, combine the softened cream cheese, sour cream, and milk. Mix until smooth. Add the garlic powder, onion powder, Dijon mustard, and season with salt and pepper.

          Combine Ingredients: Add the cooked rice, steamed broccoli, and shredded cheddar cheese to the cheese mixture. Stir until everything is evenly coated and combined.

            Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it out evenly.

              Prepare the Topping: In a small bowl, combine the breadcrumbs with olive oil or melted butter, mixing well to coat. Sprinkle the breadcrumb mixture evenly over the casserole.

                Bake the Casserole: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the casserole is heated through.
