1 cup quinoa, rinsed

2 cups vegetable broth

2 cups fresh broccoli florets (about 1 small head)

1 cup shredded sharp cheddar cheese

1 cup milk (or plant-based milk for a vegan option)

2 tablespoons cream cheese (or vegan cream cheese)

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

Salt and pepper to taste

Optional: 1/4 teaspoon red pepper flakes for a kick

Cook the Quinoa: In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing for about 3-4 minutes until the onion becomes translucent and fragrant.
