Ingredients

12 oz penne pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon red pepper flakes (optional, for a kick)

4 cups fresh spinach, roughly chopped

1 cup heavy cream

1 cup Alfredo sauce (store-bought or homemade)

1 cup grated Parmesan cheese, plus more for topping

1 cup shredded mozzarella cheese

Salt and pepper to taste

1 teaspoon Italian seasoning (optional)

Fresh basil or parsley for garnish

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

Sauté Spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. If you like heat, sprinkle in the red pepper flakes. Add the chopped spinach and cook until wilted, about 3-4 minutes. Season with salt, pepper, and Italian seasoning if using. Remove from heat.

Mix the Creamy Sauce: In a large mixing bowl, combine the heavy cream and Alfredo sauce. Stir in the grated Parmesan cheese until smooth. Add the cooked spinach mixture and cooked penne pasta to the bowl. Mix until everything is well coated and evenly combined.

Transfer to Baking Dish: Pour the creamy penne mixture into a greased 9x13-inch baking dish. Spread it out evenly.

Add Cheese Topping: Sprinkle the shredded mozzarella cheese generously over the top of the pasta. Add extra Parmesan if desired for a golden crust.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Garnish and Serve: Remove from the oven and let it sit for a few minutes. Garnish with fresh basil or parsley for a pop of color and flavor. Serve warm and enjoy your creamy baked penne!
