Creamy Avocado Ranch Taco Bowls

2 cups cooked brown rice or quinoa

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 red bell pepper, diced

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1 cup shredded lettuce

½ cup shredded cheddar cheese (optional)

½ teaspoon ground cumin

½ teaspoon smoked paprika

Salt and pepper to taste

For the Creamy Avocado Ranch Dressing:

1 ripe avocado

½ cup Greek yogurt (or sour cream)

1 packet ranch seasoning mix (or homemade ranch seasonings)

Juice of 1 lime

2 tablespoons fresh cilantro, chopped

Salt and pepper to taste

Water to thin (if needed)

Instructions
 

Prepare the Creamy Avocado Ranch Dressing:

    - In a blender or food processor, combine the ripe avocado, Greek yogurt, ranch seasoning mix, lime juice, and chopped cilantro.

      - Blend until smooth. If the dressing is too thick, add a bit of water, one tablespoon at a time, until you reach your desired consistency. Season with salt and pepper to taste. Set aside.

        Cook the Rice/Quinoa:

          - If you haven’t already, cook the brown rice or quinoa according to package instructions. Once cooked, fluff with a fork and set aside to cool slightly.

            Combine Taco Ingredients:

              - In a large bowl, combine the cooked rice or quinoa, black beans, corn, diced red bell pepper, and cherry tomatoes. Add the cumin, smoked paprika, salt, and pepper. Gently toss to mix all the ingredients evenly.
