12 oz spaghetti or linguine

2 ripe avocados, peeled and pitted

1 garlic clove, minced

1 cup fresh basil leaves, packed (plus extra for garnish)

1/4 cup fresh lemon juice

1/4 cup extra-virgin olive oil

1/4 teaspoon red pepper flakes (optional, for a kick)

Salt and pepper, to taste

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan version)

Cherry tomatoes, halved (for garnish)

Pine nuts or walnuts, toasted (for garnish, optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti or linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Prepare the Avocado Sauce: In a food processor, combine the peeled avocados, minced garlic, basil leaves, lemon juice, olive oil, red pepper flakes (if using), salt, and pepper. Blend until smooth and creamy. If the sauce is too thick, add reserved pasta water a tablespoon at a time until you reach the desired consistency.

      Combine Pasta and Sauce: In a large mixing bowl, combine the drained pasta with the avocado sauce. Toss until the pasta is evenly coated. If needed, add more reserved pasta water to thin the sauce.

        Add Cheese and Mix Well: Stir in the grated Parmesan cheese and mix thoroughly. Taste and adjust seasoning with more salt and pepper, if necessary.

          Serve: Divide the creamy avocado pasta into bowls. Top with halved cherry tomatoes, toasted nuts, and extra basil leaves for garnish. Drizzle with a touch more olive oil if desired.
