Creamy Avocado Pasta with Basil

12 oz. spaghetti or your favorite pasta

2 ripe avocados, pitted and peeled

1 cup fresh basil leaves, plus extra for garnish

1/4 cup extra virgin olive oil

2 cloves garlic, minced

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Juice of 1 lemon

Salt and pepper, to taste

Red pepper flakes (optional, for a kick)

1/4 cup toasted pine nuts or walnuts (for added crunch)

Instructions
 

Cook the Pasta: Begin by cooking the spaghetti according to the package instructions in a large pot of salted boiling water. Once al dente, reserve about 1 cup of pasta water and drain the rest. Set the pasta aside.

    Make the Avocado Sauce: In a food processor or blender, combine the avocados, fresh basil leaves, olive oil, minced garlic, lemon juice, and half of the Parmesan cheese. Blend until smooth and creamy. If the sauce is too thick, gradually add some of the reserved pasta water until you reach your desired consistency.

      Season the Sauce: Taste the avocado sauce and season with salt and pepper. Add red pepper flakes if you like a little heat.

        Combine Pasta and Sauce: In a large mixing bowl, toss the cooked pasta with the creamy avocado sauce. If needed, add more reserved pasta water a tablespoon at a time to help the sauce coat the pasta evenly.

          Serve: Divide the creamy avocado pasta among serving plates. Top with the remaining Parmesan cheese, a sprinkle of toasted nuts for crunch, and a few extra basil leaves for garnish.
