12 oz (340g) spaghetti or pasta of your choice

2 ripe avocados, pitted and peeled

1 cup fresh basil leaves, packed, plus extra for garnish

2 cloves garlic, minced

1/4 cup freshly squeezed lemon juice

1/4 cup olive oil

Salt and pepper to taste

1/2 cup grated Parmesan cheese (optional, for a non-vegan version)

1/4 tsp red pepper flakes (optional, for a bit of heat)

Cherry tomatoes, halved (for garnish)

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water before draining.

    Prepare the Avocado Sauce: While the pasta is cooking, prepare the avocado sauce. In a food processor, combine the avocados, basil leaves, minced garlic, lemon juice, and olive oil. Blend until smooth and creamy. If the sauce is too thick, add a few tablespoons of the reserved pasta water until you reach your desired consistency.

      Flavor the Sauce: Once the sauce is blended, taste and season with salt, pepper, and red pepper flakes if desired. Blend again to incorporate the spices.

        Combine Pasta and Sauce: In a large mixing bowl, toss the drained pasta with the creamy avocado sauce. If the sauce is too thick, add more reserved pasta water, a little at a time, until you achieve the desired coating on the pasta.

          Add Cheese: If you’re including Parmesan, sprinkle it over the pasta and gently toss to combine.
