Ingredients

12 oz spaghetti or your favorite pasta

2 ripe avocados

1 cup fresh basil leaves (plus extra for garnish)

3 tablespoons olive oil

2 cloves garlic, minced

Juice of 1 lemon

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Salt and pepper to taste

Crushed red pepper flakes (optional, for a hint of spice)

Cherry tomatoes, halved (for garnish)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package directions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Prepare the Avocado Sauce: In a food processor or blender, combine the ripe avocados, fresh basil leaves, olive oil, minced garlic, lemon juice, and Parmesan cheese. Blend until smooth and creamy. Add a bit of the reserved pasta water if needed to achieve your desired consistency.

Season the Sauce: Taste the avocado sauce and season with salt and pepper. If you like a little heat, add crushed red pepper flakes.

Mix Pasta and Sauce: In a large mixing bowl, combine the hot drained pasta with the avocado sauce. Toss well to coat the pasta evenly. If the sauce is too thick, gradually add more reserved pasta water until you reach the desired creaminess.

Serve: Divide the creamy avocado pasta among serving plates. Garnish with cherry tomatoes, extra basil leaves, and an additional sprinkle of Parmesan cheese.

Enjoy: Serve immediately while warm for the best flavor!
