12 oz spaghetti or your choice of pasta

2 ripe avocados, pitted and peeled

1 cup fresh basil leaves, packed

3 cloves garlic, minced

2 tablespoons lemon juice

1/4 cup extra-virgin olive oil

1/2 teaspoon salt, or to taste

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for a kick)

1/2 cup freshly grated Parmesan cheese (plus more for serving)

Cherry tomatoes, halved (for garnish)

Fresh basil leaves (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Avocado Sauce: In a food processor, combine the ripe avocados, basil leaves, minced garlic, lemon juice, olive oil, salt, pepper, and red pepper flakes (if using). Blend until smooth and creamy, scraping down the sides as necessary. If the mixture is too thick, add a bit of the reserved pasta water until you reach your desired consistency.

      Combine Pasta and Sauce: In a large bowl, combine the hot pasta with the avocado sauce. Toss well to coat the pasta evenly. If needed, add more reserved pasta water to thin the sauce and help it adhere to the pasta.

        Add Cheese: Gently fold in the freshly grated Parmesan cheese until well mixed. Adjust seasoning with additional salt and pepper if needed.

          Serve: Transfer the creamy avocado pasta to serving plates or bowls. Garnish with halved cherry tomatoes and fresh basil leaves. Sprinkle additional Parmesan cheese on top for an extra touch.
