Creamy Avocado Pasta with Basil

12 oz (340g) spaghetti or your favorite pasta

2 ripe avocados

1/2 cup fresh basil leaves, plus extra for garnish

2 cloves garlic

1/4 cup freshly squeezed lemon juice

1/4 cup extra virgin olive oil

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1/4 cup grated Parmesan cheese (optional)

1/2 cup cherry tomatoes, halved (for topping)

Toasted pine nuts (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

    Prepare the Avocado Sauce: While the pasta is cooking, in a food processor, combine the ripe avocados, basil leaves, garlic, lemon juice, olive oil, salt, and black pepper. Blend until smooth and creamy. If the mixture is too thick, add a little reserved pasta water to reach your desired consistency.

      Combine Pasta and Sauce: In the pot you used for the pasta (or in a large mixing bowl), toss the drained spaghetti with the creamy avocado sauce until the pasta is well coated. If needed, add more reserved pasta water, a tablespoon at a time, to loosen the sauce.

        Add Toppings: Gently fold in the halved cherry tomatoes for a burst of freshness. If using, sprinkle the grated Parmesan cheese over the pasta and mix well.
