Creamy Avocado Pasta

12 oz spaghetti or your favorite pasta

2 ripe avocados, halved and pitted

2 tablespoons fresh lemon juice

2 cloves garlic, minced

¼ cup fresh basil leaves, plus extra for garnish

¼ cup grated Parmesan cheese (or nutritional yeast for a vegan option)

¼ teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

2 tablespoons olive oil

½ cup cherry tomatoes, halved (optional)

Freshly cracked black pepper and additional Parmesan for serving

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve about 1 cup of pasta cooking water, then drain the pasta and set aside.

    Prepare the Avocado Sauce: In a blender or food processor, combine the avocados, lemon juice, garlic, basil, Parmesan cheese, red pepper flakes, salt, and black pepper. Blend until smooth and creamy. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency.

      Combine Pasta and Sauce: In a large bowl, toss the cooked pasta with the creamy avocado sauce. If needed, add more reserved pasta water to help coat the pasta evenly.

        Add Olive Oil: Drizzle the olive oil over the pasta and toss gently to combine. Taste and adjust seasoning if necessary.

          Serve: If using, add halved cherry tomatoes for freshness. Serve immediately, garnished with additional basil, freshly cracked black pepper, and more Parmesan cheese if desired.
