2 cups fresh corn kernels (or 1 can of corn, drained)

1/2 cup all-purpose flour

1/2 cup cornmeal

1/4 cup finely chopped green onions

1/4 cup finely chopped red bell pepper

1/4 cup grated cheese (cheddar or feta)

2 large eggs

1/2 cup milk

1 tsp baking powder

1/2 tsp smoked paprika

1/2 tsp garlic powder

Salt and pepper to taste

Vegetable oil for frying

Prepare the Batter: In a large bowl, combine the corn kernels, flour, cornmeal, green onions, red bell pepper, cheese, and spices (baking powder, smoked paprika, garlic powder, salt, and pepper). Mix well to combine.

    Add Wet Ingredients: In a separate bowl, whisk together the eggs and milk until smooth. Pour the egg mixture into the dry ingredients and stir until just combined; be careful not to overmix. The batter should be thick and hold together.

      Heat the Oil: In a large skillet, heat about 1/4 inch of vegetable oil over medium heat. You can test if the oil is ready by dropping a small spoonful of batter into the oil; it should sizzle immediately.

        Fry the Fritters: Drop spoonfuls of batter (around 2-3 tablespoons each) into the hot oil, ensuring not to crowd the pan. Flatten them gently with the back of the spoon. Fry for about 3-4 minutes on each side or until they are golden brown and crispy.
