1 cup green or brown lentils, rinsed

2 tablespoons olive oil

1 medium onion, diced

3 garlic cloves, minced

2 carrots, sliced

2 celery stalks, diced

1 bell pepper (any color), chopped

1 zucchini, chopped

1 cup diced tomatoes (canned or fresh)

4 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon dried thyme

1 bay leaf

Salt and pepper to taste

2 cups fresh spinach or kale

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

    Add the Veggies: Stir in the carrots, celery, and bell pepper. Cook for another 5 minutes, stirring occasionally, until the vegetables start to soften.

      Incorporate Zucchini and Lentils: Add the chopped zucchini and rinsed lentils to the pot. Mix everything thoroughly for about 2 minutes.

        Season and Simmer: Pour in the diced tomatoes, vegetable broth, cumin, smoked paprika, thyme, and bay leaf. Stir well and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for 25-30 minutes, or until the lentils are tender.
