Comforting Slow Cooker Lasagna Soup

Ingredients
  

1 lb ground beef or Italian sausage

1 medium onion, diced

3 cloves garlic, minced

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

1 (28 oz) can crushed tomatoes

2 cups beef or vegetable broth

1 (15 oz) can tomato sauce

8 oz rotini or penne pasta (uncooked)

1 cup ricotta cheese

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Salt and pepper, to taste

Instructions
 

In a skillet over medium heat, brown the ground beef or sausage until fully cooked. Drain any excess fat. Add the diced onion and garlic to the skillet and sauté until the onion is translucent (about 3-4 minutes).

    Transfer the meat mixture to the slow cooker. Stir in the Italian seasoning, red pepper flakes (if using), crushed tomatoes, broth, and tomato sauce. Season with salt and pepper to taste. Mix well.

      Cover the slow cooker and cook on low for 6 hours or on high for 3 hours.

        About 30 minutes before serving, stir in the uncooked pasta and cover. Let it cook until the pasta is tender, approximately 30-40 minutes.

          Before serving, stir in the ricotta cheese until well combined. Sprinkle in half of the mozzarella and all of the Parmesan cheese, stirring gently to incorporate. Reserve the remaining mozzarella for topping.

            Serve the soup hot in bowls, garnished with fresh basil leaves and an additional sprinkle of mozzarella cheese.
