8 oz rotini pasta

1 can (5 oz) tuna in olive oil, drained

1 cup cherry tomatoes, halved

1 cup cucumbers, diced

1/2 cup red onion, finely chopped

1/2 cup black olives, sliced

1/4 cup fresh parsley, chopped

1/4 cup fresh lemon juice

1/4 cup extra virgin olive oil

1 tsp Dijon mustard

Salt and pepper to taste

Instructions
 

Begin by cooking the rotini pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and rinse with cold water to prevent further cooking. Let the pasta cool completely.

    In a large mixing bowl, combine the cooled pasta, drained tuna, halved cherry tomatoes, diced cucumbers, chopped red onion, black olives, and fresh parsley. Toss gently to mix all ingredients evenly.

      In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper until well combined.

        Pour the dressing over the pasta salad and gently toss until everything is well-coated.

          Cover the salad and refrigerate for at least 30 minutes to let the flavors meld together.

            Before serving, give the salad a quick toss and taste; adjust seasoning with more salt, pepper, or lemon juice as desired. Serve chilled.
