Ingredients
  

2 cups rotini pasta

1 lb grilled chicken breast, diced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

3 tbsp red wine vinegar

1 tsp dried oregano

Salt and pepper, to taste

Optional: 1/4 tsp red pepper flakes for heat

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to the package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, pepper, and red pepper flakes (if using). Set aside.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, diced grilled chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley.

        Dress the Salad: Pour the dressing over the pasta salad and gently toss until evenly coated. Adjust seasoning if necessary.

          Chill and Serve: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled, garnished with extra parsley if desired.
