12 ounces of tri-color fusilli pasta

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocce balls), halved

½ cup Kalamata olives, pitted and sliced

1 cup fresh basil leaves, packed and roughly chopped

⅓ cup freshly squeezed lemon juice (about 2-3 lemons)

½ cup extra virgin olive oil

1 clove garlic, minced

1 teaspoon honey (optional for sweetness)

Salt and pepper to taste

Grated Parmesan cheese for serving (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the tri-color fusilli pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Let it cool completely.

    Prepare the Dressing: In a small bowl, whisk together the lemon juice, extra virgin olive oil, minced garlic, honey (if using), salt, and pepper until well combined.

      Combine Ingredients: In a large mixing bowl, add the cooled pasta, cherry tomatoes, mozzarella balls, Kalamata olives, and roughly chopped basil leaves. Pour the dressing over the salad and toss gently until all ingredients are well coated.

        Chill the Salad: Cover the bowl with plastic wrap or a lid and refrigerate the salad for at least 1 hour. This allows the flavors to meld and the salad to chill.

          Serve: Just before serving, give the salad a gentle toss and taste for seasoning, adjusting salt and pepper as needed. Serve chilled, with grated Parmesan cheese sprinkled on top if desired.
