8 oz (about 225 g) whole wheat pasta (fusilli or rotini work great)

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 small cucumber, diced

1 bell pepper (any color), diced

1/4 red onion, finely chopped

1/2 cup feta cheese, crumbled (optional)

1/4 cup black olives, pitted and sliced

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tbsp red wine vinegar

1 clove garlic, minced

Salt and pepper to taste

1 tsp dried oregano

1 tsp lemon juice

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, lemon juice, dried oregano, salt, and pepper. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, add the cooled pasta, chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, black olives, and parsley. If using, add the crumbled feta cheese.
