Ingredients

For the Peach Filling:

4 cups fresh peaches, peeled and sliced (or 2 cans of sliced peaches, drained)

2 tablespoons sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 teaspoon cornstarch

For the Coconut Oat Topping:

1 cup rolled oats

1 cup shredded sweetened coconut

1 cup all-purpose flour

1/2 cup packed brown sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup cold unsalted butter, cut into small cubes

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Peach Filling: In a large bowl, combine the sliced peaches, sugar, lemon juice, vanilla extract, and cornstarch. Toss gently until the peaches are coated. Pour the peach mixture into a greased 9x13 inch baking dish.

Make the Crisp Topping: In another bowl, mix together the rolled oats, shredded coconut, flour, brown sugar, cinnamon, and salt. Add the cold butter cubes to the mixture, using a pastry cutter or your fingers to combine until the mixture resembles coarse crumbs.

Assemble the Crisp: Sprinkle the coconut-oat topping evenly over the peach filling in the baking dish.

Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the peach filling is bubbling.

Cool and Serve: Allow the Coconut Peach Crisp to cool for at least 10 minutes before serving. It can be enjoyed warm or at room temperature, ideally with a scoop of vanilla ice cream on top.
