1 pound large shrimp, peeled and deveined

1 cup coconut milk

1 tablespoon lime zest

2 tablespoons fresh lime juice

2 tablespoons brown sugar

1 teaspoon ground ginger

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup unsweetened shredded coconut

Fresh lime wedges and cilantro, for garnish

Wooden or metal skewers (if using wooden, soak them in water for 30 minutes prior to use)

Instructions
 

Marinate the Shrimp: In a large bowl, combine the coconut milk, lime zest, lime juice, brown sugar, ground ginger, garlic powder, salt, and black pepper. Whisk until well blended. Add the shrimp to the mixture, ensuring they are fully submerged. Cover and refrigerate for at least 30 minutes or up to 2 hours to allow the flavors to meld.

    Preheat the Grill: Preheat your grill or grill pan over medium-high heat. If using an outdoor grill, make sure the grates are clean and lightly oiled to prevent sticking.

      Prepare the Skewers: While the grill is heating, remove the shrimp from the marinade and gently shake off any excess liquid. Roll the shrimp in the shredded coconut, pressing lightly so they adhere well.
