1 cup (240ml) canned pumpkin puree

1/2 cup (100g) granulated sugar

1/2 cup (100g) brown sugar, packed

1/2 cup (120ml) vegetable oil

1 large egg

1 teaspoon vanilla extract

1 1/2 cups (190g) all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon ground cloves

1/2 cup (75g) chopped walnuts or pecans (optional)

1/2 cup (90g) dark chocolate chips or raisins (optional)

Instructions
 

Preheat your oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan or line it with parchment paper for easier removal.

    Mix the wet ingredients: In a large mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, egg, and vanilla extract. Whisk together until smooth and well incorporated.

      Combine the dry ingredients: In another bowl, sift together the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, nutmeg, ginger, and cloves. Mix well to ensure the spices are evenly distributed.

        Combine wet and dry mixtures: Gradually add the dry ingredients to the pumpkin mixture, stirring gently with a spatula until just combined. Do not over-mix; it's okay if some lumps remain.

          Add optional ingredients: Fold in the chopped walnuts or pecans and dark chocolate chips or raisins, if using. This adds delightful texture and flavor!
